Chocolate and Confectionery Tins: Barrier, Liners and Temperature

Chocolate is the most demanding thing you can put in a tin. What changes in the coating, the liner, the closure and the shipping plan when the contents melt, bloom and absorb odour.

A tin that works perfectly for tea or biscuits can fail with chocolate. The contents are sensitive to three things a metal box does not automatically solve — temperature, moisture and odour — and they are also fragile, which makes the interior structure as important as the exterior.

This guide covers what changes in the specification when the product is chocolate or sugar confectionery, and where the avoidable failures happen.

The three problems, in order of cost

Buyers tend to focus on the first, which packaging can least affect, and underspecify the other two, which it can largely solve.

Interior coating: where odour transfer starts

Cocoa butter is an efficient absorber of ambient odours. If the interior lacquer is wrong for the application, or correctly specified but under-cured, residual solvent odour migrates into the product and the customer tastes the tin.

What to specify and verify:

  • A food-contact interior coating appropriate to a fatty product, not a general-purpose lacquer.
  • Full cure, confirmed by the factory’s process record rather than by appearance. Under-cure is the usual root cause of odour complaints and it is invisible.
  • An odour test on production samples — leave the tins closed and empty for a period, then open and smell them, and separately store real product in them.

If the chocolate is wrapped in foil or flow-wrapped before it enters the tin, the coating requirement relaxes considerably — which is itself a design decision worth making early, because it changes the cost of the whole package.

Liners, trays and how the pieces sit

Loose chocolate in a metal box arrives scratched, chipped and rearranged. The interior fitment is doing three jobs at once: presentation, protection and portion definition.

  • Vacuum-formed trays are the standard for assortments — each piece has a seat, nothing moves, and the reveal on opening is controlled.
  • Paper or board inserts read as more premium and more sustainable to many brands, but give less impact protection and are more sensitive to humidity.
  • Pleated cups allow flexibility in the assortment without new tooling, at the cost of a less structured presentation.
  • A simple divider is often enough for robust items such as wrapped toffees or hard sweets.

The trap is designing the tray before the recipe is final. A tray is tooled to a specific piece geometry; if the confectioner changes a mould or a piece weight afterwards, the tray no longer fits and the tooling is wasted. Lock the piece dimensions before tray tooling, not after.

Closure: how tight is tight enough

Most chocolate tins do not need a true airtight seal. What they need is a closure that keeps humidity swings out during storage and does not spring open in transit.

  • Slip lid — the standard for gift assortments. Presentation is good, moisture protection is moderate, and depth of overlap matters more than most buyers realise.
  • Hinged lid — good for repeat opening formats such as mints and small confectionery, and it keeps the lid attached in use.
  • Sealed or gasketed closure — worth the cost only where the product genuinely needs it, or where the tin is the primary barrier with no inner wrap.

Where the tin is the sole barrier and shelf life is long, treat it as a barrier package and specify accordingly. Where there is an inner flow-wrap or foil, the tin is a presentation and protection layer and the closure can be chosen for feel. Our guide to lid types compares them in detail.

Seasonal gifting: the format constraints

Most confectionery tin volume is seasonal, which imposes its own requirements:

  • Stackability and shelf footprint matter more than usual, because the product competes in crowded seasonal displays.
  • The opening moment is the product. A gift tin is judged on the reveal — the lid resistance, the first sight of the tray, whether the pieces are aligned.
  • Reuse is a selling point. Buyers keep confectionery tins. A tin that reads as reusable earns shelf life in the home and repeat brand exposure.

Shipping and storage: the part outside the tin

Packaging cannot fix a temperature problem, but the shipping plan can.

  • Route and season. A container crossing the tropics in summer will exceed chocolate’s tolerance regardless of the tin. Reefer or seasonal routing is a product decision, not a packaging one.
  • Cases and pallet configuration. Tins are rigid and stack well, but a crushed case corner still deforms a lid and ruins the presentation.
  • Condensation on arrival. Moving cold cargo into a warm humid warehouse causes condensation, and that is a sugar bloom risk on unwrapped product. Acclimatisation before opening cases matters.

A specification checklist for chocolate and confectionery

  • Product form — unwrapped, foil-wrapped or flow-wrapped inside the tin
  • Piece dimensions, locked, before tray tooling
  • Interior coating type, with cure verification and an odour test on samples
  • Liner or tray type, material and whether it is tooled or stock
  • Closure type and required opening force
  • Shelf life target and whether the tin is the primary barrier
  • Destination market food-contact documentation
  • Season and on-shelf date, worked backwards to a tooling deadline
  • Transport route and expected temperature exposure
